Vanilla & Chocolate Pudding

This chocolate and vanilla pudding is delectable, smooth and egg free!

Today, I share my smooth vanilla & chocolate pudding.  This is a combination of cocoa pudding and milk pudding. Two weeks ago my niece asked me to make her vanilla and cocoa pudding.  I ended up serving two of them in a serving cup.   She liked it a lot.  Today I made it again.

This recipe includes no eggs.  Flour and cornstarch work as thickeners.

This tempting pudding is unbelievably easy to make, almost ready in 15 minutes.

Here are the steps,

First I place the flour, cornstarch and sugar in a medium saucepan and mix.  Then I add milk and stir.  I scrape down the sides of the pan to make sure they are all mixed.    Later, I put the saucepan over med-high heat and whisk almost for 4 minutes.   When it boils I add the vanilla and whisk for extra 2-3 minutes. Next, I transfer the pudding into a measuring cup so I can easily pour it into glasses easily.

I put the serving cups aside.  While waiting for vanilla pudding to firm up, I start to make my chocolate pudding which takes only 6 minutes.  I place cornstarch, flour, sugar and cocoa powder in a medium saucepan and mix.  Then I add the milk and stir until no lumps remain.  I scrape down the sides of the pan.  As it starts to boil, I add the vanilla and whisk for 1-2 minutes.   Again, I transfer it into a measuring cup and divide among the serving cups.

Finally, I sprinkle some crushed hazelnuts on top.  You can serve plain or sprinkle nuts or shredded coconuts on top.

Ingredients

Vanilla Pudding

  • 500 g (2 cups) milk
  • 25 g (2 and ½ tablespoons) all purpose flour
  • 10 g (1 and ½ tablespoons) cornstarch
  • 50 g (¼ cup) granulated sugar
  • 1 teaspoon vanilla extract

Chocolate Pudding

  • 500 g (2 cups) milk
  • 10 g (1 tablespoon) all purpose flour
  • 15 g (2 tablespoons) cornstarch
  • 50 g (¼ cup) granulated sugar
  • 12 g (2 tablespoons) cocoa powder
  • 1 teaspoon vanilla extract

Instructions

Vanilla Pudding

  • Put the flour, cornstarch and sugar in a medium saucepan and mix. Add milk and stir. Scrape down the sides of the pan to make sure they are all mixed without any lumps.
  • Place the saucepan over med-high heat and whisk for 4 minutes until it boils. When it boils, add the vanilla and whisk for extra 3 minutes. Transfer the pudding into a measuring cup to easily pour it into serving cups. Divide the pudding among the serving cups. Set aside the serving cups.

Chocolate Pudding

  • Put the flour, cornstarch, cocoa powder and sugar in a medium saucepan and mix. Add milk and stir. Scrape down the sides of the pan to make sure they are all mixed without any lumps.
  • Place the saucepan over med-high heat and whisk for 4 minutes until it boils. When it boils, add the vanilla and whisk for extra 2 minutes. Remove from the heat and transfer the pudding into a measuring cup to easily pour it into serving cups. Divide the pudding among the serving cups filled with vanilla pudding. Let them cool for 1 hour at room temperature and then keep in the fridge.
