INGREDIENTS YOU'LL NEED

Apples

Granulated sugar

Baking powder

Salt

All purpose flour

Cinnamon

Nutmeg

Eggs

Olive oil

Vanilla extract

Heavy cream (for the caramel sauce)

Milk

Toss the apples with cinnamon and nutmeg in a medium bowl.  Set aside the bowl.

Mix the flour, baking powder, cinnamon and salt in a medium bowl. Set aside the bowl.

Place the eggs and sugar in a large bowl and stir with a whisk until just combined.

Stir in the olive oil, milk and vanilla extract.

Spread ⅔ of the mixture into an oven-proof dish.

Add the flour mixture in 2 to 3 batches and mix until combined. Fold the apples with a spoon/spatula.

Pour the batter into a greased and floured pan so the cake doesn't stick to the pan once baked.  Bake for almost 50 minutes or until a toothpick inserted comes out clean.

While the cake is baking, you can prepare the caramel sauce. You can make it with heavy cream and sugar.

Pour the caramel sauce over the cake, keep the excess sauce in the fridge to let it thicken.  You can serve the excess sauce once you slice the cake.

Place the cake on a cake stand/plate.
