Lemons (lemon juice and zest)

Mix the lemon zest and sugar in a medium heatproof bowl.

Add in the eggs and whisk them.

Mix in the lemon juice.

Place a  saucepan  -which is  large enough  to hold the  heat proof  bowl- over

med-high heat, filled with 2 inches (5 cm) water. Once the water simmers, reduce the heat to medium heat and put the bowl with mixture over the saucepan. Whisk gently and continuously for a creamy mixture and even cooking.

The mixture should be    thick before adding the butter and mixing. 

You can test the thickness by placing a spoon into the mixture. It should coat the back of a spoon and a line should be visible when you run your finger through it.

Sieve the lemon curd into a clean bowl and cover the bowl with a plastic film by lightly pressing the lemon curd.  This prevents a skin from forming on top when cooling.
