Frozen Strawberry and White Chocolate Cups
These frozen strawberry and white chocolate cups are very refreshing! You will love the strawberry-white chocolate combination even if you are not a white chocolate lover. It takes only 15 minutes to prepare the cups. You should wait 3 hours to eat these delicious frozen cups.
Servings: 10 cups
- 300 g (2 cups whole) strawberries*
- 180 g (6 oz) white chocolate morsels or white chocolate couverture, roughly chopped
Cut the top of the strawberries and put in the food processor and make a puree. Pour the puree into a bowl and keep in the freezer until needed. (When you cut the top of the strawberries and make the puree, it will be 240 grams)
Place the white chocolate morsels/roughly chopped chocolate into a heat proof bowl that sits over a pan of simmering water. Stir often.
Take out 10 small cupcake papers. Put 1 teaspoon of melted chocolate into the cupcake papers. With the back of a spoon, cover the sides with chocolate. Use more melted chocolate as needed to cover uncovered parts. Keep the cupcake papers in the fridge to let the chocolate set for almost 15 minutes.
When the chocolate sets, take the cupcake papers from the fridge and put almost 1 tablespoon of strawberry puree into them. Pour melted chocolate over strawberry puree and spread the chocolate with the back of a spoon. If you want you can use less than 1 tablespoon of puree and cover the top with more melted chocolate. Freeze for 3 hours and eat them with joy! (If you have a hard time putting the white chocolate on top, you can keep the cups with the strawberries in the freezer for some time-after you cover them with white chocolate, you can shorten the freezing time later as you freeze them before.)
*If the strawberries are too sweet, you can add some lemon juice to balance the sweetness of the white chocolate.
