Chocolate Peanut Clusters

You only need 2 ingredients to make these chocolate covered peanut clusters!  My peanut to chocolate ratio is the only key to make this delicious and easy recipe.

Ingredients

  • 200 grams (1 and ⅓ cup) peanuts, roasted*
  • 250 grams (8.8 oz) semi-sweet chocolate**, roughly chopped

Instructions

  • Line baking sheet with parchment paper and set aside.
  • Melt the chocolate over bain marie:  Place the chopped chocolate into a heatproof bowl that sits over a pan of simmering water, stir often.
  • Remove the melted chocolate from the heat and add the peanuts, stir with a spoon until all the peanuts are covered with chocolate.
  • Using a small cookie scoop or teaspoon/s or a tablespoon(depending on how big you want the clusters), place the mixture onto the parchment paper. Let them set in the fridge for almost 45 minutes.

Notes

*You can use salted or unsalted peanuts.  Each version is yummy.
If your peanuts are not toasted, you can roast the peanuts by placing the peanuts in a  medium pan and toast at medium heat until they give off their aroma. It should take 7-8 minutes. Don’t forget to swirl the pan or stir the peanuts with a spoon to avoid them burning. 
**I use 54% cocoa. If you like you can use milk chocolate or a mixture of dark and milk chocolate.     I use just enough chocolate to cover the peanuts.  If you prefer, you can increase the chocolate amount up to 300 grams (10.5 oz).
How to Store: You can keep in an airtight container in the fridge up to a month.
