Almond Cream

You can make almond cream (creme d’amande) which is a delicious and easy classic French pastry filling recipe with only 5 ingredients! This recipe is enough (500 grams-17.5 oz) to fill a 9-10 inch(23-25cm) tart pan.

Ingredients

  • 130 g (½ stick and ⅓ cup) unsalted butter, room temperature
  • 130 g (½ cup and 2 tablespoons) granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon almond extract optional
  • 130 g (1 and ⅓ cup) almond flour
  • 2 and ½ tablespoons all-purpose flour or cornstarch*

Instructions

  • Place the butter and sugar into a bowl of mixer and beat for 2-3 minutes until it is creamy with a hand-held mixer or with paddle attachment if using a stand mixer. You can do it by hand but make sure to mix until light and fluffy.
  • Once the mixture is creamy, stop the mixer, scrape the sides with a spatula. Add the eggs one at a time; beat after each addition, mix until combined. Add the almond extract now if using.
  • Add the almond flour and flour/cornstarch and mix until combined. As this is a raw filling, you shouldn't consume as it is. You should bake it as a filling in a recipe to avoid contamination.

Notes

If you want to make a gluten-free dessert, you can use cornstarch instead of flour.
How to Store: You can use this filling immediately as a filling or cover it with a plastic film and keep in the fridge. You should consume in 2 days.
