INGREDIENTS YOU'LL NEED

All purpose flour

Ground ginger

Ground cinnamon

Unsalted butter

Granulated sugar

Eggs (you need only 1 egg for the dough and no more egg if you use store bought lemon curd, but if you make my homemade lemon curd you'll need 3 eggs for the curd)

Lemons (you'll need lemons if you make my homemade lemon curd)

If you don't have lemon curd, first you should make it and let it set in the fridge for at least an hour. You need, eggs, lemon, butter and granulated sugar.

Mix the flour, ginger and cinnamon.  Set aside.

Beat the butter and sugar in a large bowl on medium speed for almost 2 minutes until creamy with a hand-held mixer or with paddle attachment if using a stand mixer.

Mix in the egg. Add the flour mixture and mix until the dough comes together. Don't overmix.

Make almost 1 tablespoon big balls out of the dough.

Either using a 1 teaspoon-sized measuring spoon or using your finger, lightly press into the center of the dough and make an indentation.

brown and the middle is still soft.  Remove from the oven. If needed, using a clean measuring spoon, press to the middle.

Bake for almost 12 minutes or until the edges are lightly golden

Immediately fill the cookies with almost ½ and ¼ teaspoons of lemon curd. The filling will be set while the cookies are cooling on the baking sheet.
