Flour Baking powder Cinnamon Nutmeg Eggs Granulated Sugar Olive oil Vanilla Extract Carrots Walnuts
Place the flour, cinnamon, nutmeg, baking powder and salt in a medium bowl and stir. Set aside.
Whisk the sugar and eggs in a large bowl until just combined.
Mix in the olive oil and vanilla extract.
Add the flour mixture in batches. You can start with a whisk but continue with a spoon/spatula as it will make the mixing easier at the end.
Add the carrots and stir with a spoon. Mix in the walnuts.
Bake for 50-55 minutes or until the toothpick comes out clean once inserted into the middle and the top is golden brown.
