INGREDIENTS TO MAKE  APPLE CHEESECAKE BARS

Place the flour and sugar in a medium bowl and stir.

Gently mix with a fork until  the mixture is crumbly.

Add the melted butter and stir with a fork. Set aside ⅓ of the mixture.

Spread ⅔ of the mixture into an 8-inch (20cm) square dish that is lined with parchment paper. Bake the crust for 12 minutes or until it slightly changes color.  Let it cool for 10 minutes.

While the crust is baking, prepare the cheesecake filling. Beat cream cheese and sugar in a medium bowl until just combined.

Mix in the vanilla extract.  Add the eggs one at a time.

Stir until just combined.

Cut the peeled and cored apples into small pieces. Add the cinnamon, nutmeg, sugar and stir with a spoon.

Pour the cheesecake filling over the warm crust. Add the apple layer on top.

Cover the top with the dough that you set aside and bake for almost 38 minutes or until the top is lightly golden brown.

If you want to make a homemade caramel sauce, you can make it while the apple cheesecake bar is baking. You can make it with sugar and heavy cream.

Let the bar completely cool before slicing.

Add the caramel sauce on top.
