INGREDIENTS YOU'LL NEED

Apples

Granulated sugar

Lemon juice

Eggs

Vanilla extract

All purpose flour

Olive oil

Walnuts

Baking powder

Spices: Cinnamon-cloves-nutmeg

Peel and core apples. Grate 2 of the apples  and chop one of them.

Stir the flour, baking powder, cinnamon, cloves and nutmeg in a medium bowl with a whisk.  Set aside the bowl.

Place the sugar and eggs in a large bowl and stir with a whisk.  Add the olive oil and vanilla extract and stir until just combined.

Add the grated apples and stir with a whisk.  Mix in the flour in 2 batches.

Fold the chopped apples and then mix in the walnuts.

Bake for 50 minutes or until the top is golden brown and a toothpick that is inserted into the middle totally comes out clean without any moist crumbs.
