This pear almond cake is deliciously soft, moist, and packed with lightly spiced pears for the ultimate cozy fall treat. The batter takes 15 minutes to prepare and bakes in around 30 minutes!

Today, I’m sharing my pear almond cake, which is inspired by my easy almond cake. When I first created that recipe, I tested it using both 100% almond flour and a combination of all-purpose flour and almond flour. They were both delicious, but since it was a pure almond cake, I chose all almond flour for a more intense flavor.
In that post, I promised I’d share the combination version in a future recipe. Time passed, and here it is!
This cake is incredibly easy to make with simple ingredients, making it perfect for afternoon tea or a quick snack. I toss the pears in just a little bit of cinnamon—an addition I find essential, as it enhances the pear flavor without overpowering the almond flavor.
Ingredients You’ll Need for Pear Almond Cake
You can find the exact quantities at the bottom of my post, in the recipe card

- Blanched Almond Flour: Provides the nutty taste. (Tip: If you only have whole almonds, you can learn how to blanch almonds and make your own almond flour in my post!)
- All-Purpose Flour: Gives the cake its essential structure.
- Baking Powder: Acts as the leavening agent to help the cake rise.
- Salt: Enhances all the flavors. You can skip it if you omit salt.
- Granulated Sugar: I use just enough to sweeten the cake perfectly without making it overly sweet.
- Pears:I use two medium pears.
- Cinnamon: I like to toss the pears with a small amount of cinnamon to enhance the pear flavor.
- Eggs: I use 3 large eggs for a 20 cm (8-inch) pan. I also tried using 2 eggs. While 2 eggs provide structure and moisture, that extra third egg adds richness.
- Melted Butter: Adds moisture and a rich, classic flavor.
- Pure Almond & Vanilla Extracts: The almond extract boosts the nutty profile, while the vanilla adds warmth.
- Sliced Almonds: They add a crunch and beautiful appearance.
How to Make Pear Almond Cake (With Photos)
First, I peel and core the pears. Then I chop them into almost 1cm(0.40 inches) to 1.5cm (0.60 inches) pieces. I place them in a medium bowl, add the cinnamon and stir with a spoon/spatula and set aside.

Next, I combine the almond flour, all purpose flour in a medium bowl with a whisk, add the baking powder and salt.

Then, I whisk the eggs and sugar in a large bowl.

I mix in the melted butter, almond extract and vanilla extract.

After, I add the flour mixture in 2 batches. First I stir with a whisk and then continue with a spatula. Finally, I fold the pears.

I pour the mixture into parchment paper lined pan (I crumbled the paper and press to the bottom and sides)and sprinkled the almond flakes on top.

Then I bake for 28-30 minutes or until the toothpick that is inserted into the center comes out clean.

Before serving the cake, I let it cool in the pan for 10 minutes and remove from the pan and cool for extra 15 minutes on a cooling rack. As I crumpled the parchment paper, I simply lift the paper and place on a wire rack.
If you prefer lining a parchment paper only to the bottom for neat sides, first you should run a thin spatula around the inside edge of the pan to release the cake. Then you should invert the cake onto a plate and from there you can place it on a wire rack.

I dust powdered sugar on top once cooled. Hope you love this cake as much as I do!

You can keep this pear almond cake for up to 2 days at room temperature, up to 4 days in the fridge and up to 3 months in the freezer. You can thaw overnight in the fridge. If you slice and freeze it will be easier to thaw.

Pear Almond Cake Recipe
Ingredients
- 2 medium (290 grams=2 cups peeled, cored and chopped into approximately 1cm-0.4inch cubes) pears
- ¾ teaspoon ground cinnamon
- 95 grams ( ½cup) almond flour
- 95 grams (⅔ cup) all-purpose flour, dip and sweep
- 1 teaspoon baking powder
- ⅛ teaspoon salt, optional
- 3 large eggs
- 105 grams (½ cup) granulated sugar
- 75 grams (⅓ cup) butter, melted*
- ½ teaspoon pure almond extract
- ¼ teaspoon pure vanilla extract
- 25 grams (⅓ cup) sliced almonds
Instructions
- Preheat the oven to 350°F(177°C). Grease the bottom and sides of 8-inch (20cm) round cake pan and line the bottom with same-size parchment paper round or crumple the parchment paper first (as I do) and then press it into the pan well so it takes the shape of the pan. Set aside the pan.
- Peel and core the pears. Chop them into almost 1cm(0.40 inches) to 1.5cm (0.60 inches) pieces. Place them in a medium bowl, add the cinnamon and stir with a spoon/spatula and set aside.
- Place the almond flour and all purpose flour in a medium bowl and stir with a whisk. Mix in the baking powder and salt.
- Whisk the sugar and eggs in a large bowl and stir with a whisk until just combined for 20 seconds or so.
- Mix in the melted butter, almond extract and vanilla extract.
- Add the flour mixture in 2 batches. You can start to stir with a whisk and continue with a spatula.
- Gently fold the pears with a spatula.
- Pour the mixture into the pan and evenly sprinkle the almond flakes on top.
- Bake for almost 30 minutes until the top is lightly golden brown, almond flakes change color and the toothpick that is inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes and then remove the cake from the pan and cool on a wire rack. If you line a parchment paper only to the bottom for neat sides, first you should run a thin spatula around the inside edge of the pan to release the cake. Then you should invert the cake onto a plate and from there you can place it on a wire rack. If you crumpled the parchment paper, simply lift the paper and place on a wire rack. Let it cool for 15 to 20 minutes before serving. You can dust powdered on top once cooled.
